"Chargrilled" Asparagus, Courgettes, & Manouri
What a delightful vegetarian main course! Since I received my two Ottolenghi cookbooks a week ago, the excitement to cook from them hasn't stopped. The flavour of his dishes is very vibrant yet they relies much on bringing out the best of each individual ingredient.
This dish is a bit labour intensive but definitely worth the work! "Chargrilled" asparagus, zucchini (courgette), manouri cheese, and oven-dried grape tomato are enhanced by basil garlic oil. So why "chargrilled" in parenthesis? I actually do not have a grill pan nor a grill. So I seared everything on a very hot cast iron pan. The smokiness is there, just not the pretty grill marks.
This dish is every bit as pretty as the photo in the cookbook. I cannot wait to make it next time I have company over!
1/2 C bulger wheat
1/2 tsp coarse salt
3/4 C boiling water
cover the bulger with the water, and let stand for 30 minutes, or until the water is absorbed. I cover the bowl I put the bulger in with a plate, so the water and steam can cook the bulger tender.
2-3 scallions minced
3/4 cup halved seedless grapes (red or green)
1/2 C toasted chopped pecans
1/2 C feta cheese, you can crumble it, or cube it.
add all ingredients to the bulger
add this dressing
-2 Tbs (fresh) lemon juice
-1 Tbs olive oil
-season with salt and pepper
add to ingredients, and mix well.
